The fovea, the centre of the eye with detailed vision, is very small, whilst the wider peripheral vision has limited accuity. So, your eye constantly darts around, focuing the fovea sequentially on different things, in order to build a picture of the complete scene in front of you. These rapid movements with momentary periods of stability are called saccades.
